Healthy Granola for Breakfast Morning Fuel









Granola can form part of a varied and balanced diet, but it's best to keep to the recommended portion size as granola is often high in sugar. Adding milk or natural yogurt and fresh fruit will help to create a more balanced breakfast


and will add calcium, protein, vitamins and minerals.

Ingredients




2 cups of raw whole oats (old oats known as AKA), preferably organic

½ cup of chopped raw nuts
¼ cup raw seeds (sunflower or large pumpkin seeds)
Uns cup of dried unsalted fruits, chopped (optional)
2-3 tablespoons of maple syrup or raw honey (or a mixture of both)
2 tablespoons virgin coconut oil or other healthy cooking oil
 teaspoon vanilla extract or almond extract
1 large pinch of fine sea salt

Preheat the oven to 300 degrees Fahrenheit

Combine all ingredients in a mixing bowl. Use your clean hands to mix them well and toss into a coat that will be sticky and messy but this is the fun part. Coconut oil may be solid depending on your climate (its melting point is around 75 degrees Fahrenheit). Your hand will warm and melt in the mixture if it is solid, just be sure to mix it all together with other ingredients so that no pieces of oil remain.
Spread the mixture in a thin layer on a baking sheet lined with foliage and bake for 10 minutes, until slightly roasted. (To make this recipe completely environmentally friendly, dry the mixture 5 to 6 hours at 115 degrees Fahrenheit in a food dryer instead.)
Cool before serving or storing.

These granola can be kept in an airtight container in a cool and dry place for up to two weeks. Keep mines in a mason jar in the refrigerator at home and in a BPA-free plastic bag when traveling.
